Are you getting bored eating the same foods over and over again on our Paleo Challenge. Time to get creative. Janet sent me this picture and email of her creative sandwich. Looks delicious and all Paleo. Here is a copy of her e-mail.

I’ve attached the pictures and here’s the recipe to make the flaxseed focaccia, I found the recipe online for the flaxseed bread a while back and have been using it ever since. You can put whatever seasonings you want, or none at all. Like maybe you want to have garlic or oregano flavored focaccia you can sprinkle it on top before putting it in the oven. Once the bread is done use it for whatever you want.

To make the flaxseed focaccia:

2 cups ground flaxseeds
4 eggs
1/2 cup water
1/3 cup olive oil

Because you’re not using baking powder you’ll want to make sure you separate 2-3 of the eggs from their yolk and beat the egg whites until stiff peaks form, then gold into the focaccia mixture, this helps in aerating the mixture.

Pre-heat oven to 375
Line a baking tray with baking paper (parchment paper) and pour in flaxseed mixture, run a spatula over the mixture to create an even layer with 1-1.5 cm of thickness
Place in oven for 20 minutes or until cooked through.

Now for my sandwich…

I’m using the flaxseed focaccia that I made and for the insides I grilled a chicken breast, added tomatoes and lettuce and mashed up an avacado to make a spread since we wouldn’t be using mayo or anything non-paleo. This is the best sandwich, you gottta try it!
